Sarah's BBQ Chicken Salad




After a long day at work, I sometimes don’t want to take the time to cook dinner. So I have a few staple items at hand that I know I can whip up very quickly. This one is particular is very easy, healthy and delicious. Great thing about this recipe is that you can add whatever amount of ingredients you want.




Ingredients:


1 bag Lettuce (any type)


1 can pinto beans


1 can sweet corn


1 cup Feta cheese


1 tablespoon EVOO


1 tablespoon minced garlic


ChickenBBQ sauce




Directions: Add EVOO and garlic to a pan over medium heat. Wash and cut chicken into small 1 inch cubes and add too heated pan. While cooking the chicken, add the lettuce, beans, corn and feta into a large bowl. Mix well. When the chicken is just about finished cooking, reduce the heat just a tad and add the BBQ sauce. Continue cooking for another 5 minutes. Add BBQ chicken to the salad and enjoy. ~Sarah
