Meatball Sub


Next time you make spaghetti, make sure you save some sauce! This recipe can be used for spaghetti and meatballs or meatball subs. Enjoy! ~Ali

Meatball Directions

Mix and roll the following ingredients. Freeze for 30 minutes while you are making sauce.

80/20 ground chuck or ground sirloin
Worcester
egg-beat first
2 tbsp. breadcrumbs
ketchup
parsley flakes
steak seasoning
chopped green pepper
chopped onion

How to make the sauce-

In a large pot mix 16 oz. tom sauce, 6 oz. of tom paste, 2 tsp. brown sugar, 1 tsp. Italian seasoning, 2 cloves minced garlic, a few shakes of Worcester, 1 beef bouillon cube, parsley flakes, 1 piece bacon, basil, oregano, 1 bay leaf and chopped green pepper.

Simmer until you add meatballs. Add meatballs and simmer for 30-45 minutes or until meatballs are cooked through.

Serve over pasta or make meatball subs-all you need is your favorite cheese and a roll!

Cobb Salad

Happy new year! Everyone needs an excuse to start over. It is so refreshing to be able to turn the page of your calendar and start a new year. New goals, new year, new you! I made this salad last night to begin the year on a healthy note. We will see how long that goes on for...I hope your 2012 is filled with love and happiness. ~Ali

Directions
Mix together in a big salad bowl or make individual plates.

cubes of chicken
hard boiled eggs
tomatoes
avocado
red onion
bacon
cheese
lettuce
ranch dressing

Italian Kabobs

I made these for a Christmas Potluck. They're perfect with red tomatoes and green tortellini's :) ~Ang
You will need:
grape tomatoes
mozzarella cheese cubes or balls
marinated artichoke hearts, quartered
1 pkg green, cheese filled tortellini
small jar pesto
hard salami (Optional)
wood skewers

Directions:
Cook tortellini's according to package and mix with a few tablespoons of pesto until well coated. Assemble skewers in desired pattern and enjoy!

Gingerbread House


It is a great time of year to get together with friends and make Gingerbread Houses! My friends started this tradition 3 years ago. We get together, drink holiday cocktails and make our houses. Make this your year to start a new tradition. Enjoy! ~Ali

Infused Pineapple Vodka

My husband and I took a trip to Charleston, SC last month and learned how to make a new drink! We made it for a party a few weekends ago and it was a big hit. This is needed for the winter blues.

What you will need...

-vodka
-pineapple
-pitcher

Directions-Cut up 1-2 pineapples and place in a pitcher. Add vodka. Let the drink sit for a week in your fridge. Serve as a small drink or a shooter.

Ham & Cheese Crescent Roll-Ups

Ham & Cheese roll-ups are great for kids and adults. My husband and I shared these during a football game for lunch. Enjoy! ~Ali

You will need...

-Pillsbury crescent rolls
-cheese
-slices of ham

Directions: Place 3 thin slices of ham and 1-2 pieces of cheese in each crescent roll. Bake on 350 degrees for 15-20 minutes.

Crunchy Romaine Salad

2 (3 oz) pkg. ramen noodle soup mix

½ c butter

2 c chopped walnuts and/or pecans

1 c extra-virgin olive oil

½ c honey

2/3 c red wine vinegar

½ tsp. salt

½ tsp. pepper

1 lb fresh broccoli florets coarsely chopped

2 bags of a romaine lettuce blend

Remove flavor packs from soup mix and toss out. Break noodles into tiny pieces. Melt butter
on a cookie sheet in a 350° oven. Add noodles and chopped nuts. Bake the noodles and nuts
for 10 minutes or until lightly browned stirring after 5 minutes. Cool. Whisk together olive
oil, honey and vinegar. Place romaine in a large bowl. Add broccoli, nut mixture and olive oil
mixture. Toss with salt and pepper. Enjoy! (If taking to share, assemble romaine, broccoli,
salt and pepper in a bowl. Place olive oil mixture in a shaker container to take with you. Put
cooled nut mixture in a Ziploc bag). Serves 8-10

** Mix just before eating so that it does not get soggy!!
